1    cup red quinoa
2    cups water
1    tablespoon ghee (clarified butter)
½   white onion, chopped
1    clove garlic
2    tablespoons avocado oil
1    cup chopped zucchini
1    can organic black beans, rinsed and drained
kelp flakes and sea salt to taste.

Bring water, ghee, and quinoa to a boil and then simmer for 15 minutes. Sauté garlic and onions in oil until they become translucent. Add zucchini and cook for an additional 5 minutes. Add cooked quinoa to the pan along with seasonings. Finally, mix in black beans.
