Prep and cook time: 45 minutes Serves 6-8
2 tablespoons of coconut oil or avocado oil
½ yellow onion, chopped
4 cloves garlic, crushed
2 teaspoons crushed ginger
2 teaspoons organic turmeric
2 teaspoons Cylon cinnamon
2 teaspoons organic cumin powder
2 cups dried red lentils, rinsed and drained
1 small sweet potato, diced into 1″ strips
8 cups water
½ lemon, juiced
1-2 teaspoons of sea salt
organic crushed chili flakes (optional)
Heat medium-sized pot and add oil. Sauté onion on medium heat until lightly cooked or golden. Add garlic and ginger and continue to sauté for one to two minutes, until you can smell garlic and ginger.
Make space in the middle of the pan and add a little oil and remaining spices. Add crushed chili flakes if you like spicier food. Combine spices with onion, garlic, and ginger until they are all covered in spices.
Add lentils, sweet potato, water, lemon juice, and sea salt. Bring to boil, cover with lid, and turn down to low-heat simmer. Cook for about 20 minutes. Check occasionally to see if you need to add a little water.
We found this to be tasty but somewhat bland the night we made it. However, the next day, after the flavors had time to mingle together overnight, it was MUCH better.
We made this last night, the hubby and I :-)! Turned out beauitful and full of flavor. We’re enjoying the leftovers tonight! We used an entire yellow onion, instead of half. We crushed fresh garlic, 4 cloves. And grated fresh ginger, 2 Tbsp! Didn’t need the red pepper flakes. Had plenty of bite already Oh, and we were all out of cinnamon (Thanksgiving wiped-out my pantry!), so I subbed in a pinch of nutmeg. Worked perfectly! Right before serving, we sprinkled about 1 cup of fresh spniach into each bowl, then stirred it in, to wilt them into the hot soup. And then the final touch was a scoop of greek yogurt on top. Quite a meal in itself! Thanks!
omg, we forgot the sweet potato, gabe! add when you add the lentils.
Seems like a tasty dish. My salivary glands got a good workout. Keyboard’s a little wet.
So, what happened to the sweet potato?
Uh-oh Kama. In light of your comment, I spruced up the recipe a bit more with added spice. Thanks for your honesty!
BORING!
