Prep time:  20 minutes     Makes approximately 3 cups

3       medium tomatoes, finely diced
½      cup yellow onion, finely diced
6       tablespoons minced jalapeños
6       tablespoons lime juice
1/4    teaspoon sea salt
1/4    cup chopped fresh cilantro
1/8    cup chopped Italian flat parsley
1        tablespoon raw apple cider vinegar
optional: a dash of pink or Celtic salt

Combine all ingredients and mix well. Keep refrigerated.
