Prep and cook time:  1 hour      Serves 3

Charmoula Rub:
1     large handful fresh cilantro, leaves and stems chopped
1     large handful fresh Italian parsley, chopped
3     garlic cloves, chopped
2     teaspoons organic ground cumin
2     teaspoons organic ground coriander
1     teaspoon organic paprika
1     Thai chili or serrano pepper
3     tablespoons lemon juice
3     lamb steaks
coconut spray or coconut oil

Coat steaks with rub and let sit for 30 minutes. Oil grill with coconut spray or coconut oil. Grill steaks to desired doneness.
