Prep time:  20 minutes    Freezer time:  1 hour     Makes 10-14 balls

1           cup raw cashews, powdered in food processor
20 +/-   medjool or honey dates, pitted
2-3        tablespoons vanilla
3           tablespoons coconut butter (found near the nut butters in the baking aisle of health food stores)
½          cup hemp seeds
1           pinch of sea salt

Put dates, vanilla, and salt in food processor; pulse. Blend in cashew powder, enough to dry the mix out. Melt coconut butter with a few ounces warm water; add to mixture. Roll into balls and then roll the balls in hemp seeds; freeze to harden. They will be ready to eat in about an hour. Eat right out of the freezer or keep refrigerated.
