1 cup raw sunflower seeds
1/2 cup raw almonds
1/4 cup maple syrup
1/3 cup dates
3 tablespoons raw cacao powder
1/2 teaspoon Ceylon cinnamon
1/4 teaspoon sea salt
1 teaspoon vanilla extract
Process all ingredients in a food processor until combined. Roll into small walnut-sized balls. Store in refrigerator in a tightly-covered container.

Would LOVE these….but I can’t have maple syrup and dates – have Type 2 Diabetes and in process of reversing it…..

Hi Andrea, You can use dark, liquid stevia as a sweetener.
I am surprised that your recipes for people with Candida include maple syrup, dates and nuts besides almonds. I cannot tolerate any sweeteners except for stevia and was told the only nuts I could eat were almonds.
Hi Diane, This recipe is not recommended for those following our candida diet. You can search under the category “Candida Friendly” for more recipes that are ok to have.
I think you will find that all cacao nibs are actually fermented. Most cacao is also fermented.. and 95 pc of world’s coffee – fermented – unless the berries were dry processed.
These and other energy bars sound amazing! Query- I used to be able to break down nuts, but now, even if I soak them in sea salt overnight, it doesn’t seem to work. I adore nuts and seeds, so this is a shame. Can you suggest an alternate way to prepare nuts? Also, what is another healthy, protein rich substitute?

Hi Linda! As you probably know, soaking nuts helps their digestibility and it removes anti-nutrients such as phytic acid. At the same time it increases their nutrient content as well. It’s also important to rotate the types of nuts and seeds you consume on a regular basis so you don’t become sensitive to them. Since this recipe is nut/seed based there really isn’t an alternative if you can’t tolerate them. Otherwise hardboiled eggs, jerky and celery with nut butter (if you can tolerate it) are great high protein snack ideas. When folks are on our Gut Thrive in 5 program to heal and rebuild their gut microbiome we suggest they try our Crunchy Nut recipe.
Crunchy Nuts
Ingredients:
4 cups raw nuts (macadamia, brazil, walnuts, pine nuts, almonds or pecans)
1 tablespoon sea salt
filtered water
Directions:
1. Mix nuts with salt and filtered water and leave in a warm place (top of the fridge) for at
least 7 hours or overnight.
2. Drain in a colander.
3. Spread nuts on a stainless steel baking pan and place in a warm oven (no more than
150° F) for 12 to 24 hours, turning occasionally, until completely dry and crisp. (a dehydrator works well too)
4. Store in an airtight container.
Thank you for your thoughtful suggestions. A nut butter might work, as the nuts are already broken down. I will try to find one made with raw, organic nuts.
Re: Energy Bliss Nuggets: Neither my oven or toaster will permit 150 degrees. I was wondering if adding a very small amount of apple cider vinegar to the nut water bath with salt that gets dumped out after soaking might be helpful?
Hi Linda, Regarding the Crunchy Nut recipe, anything over 150 degrees is considered roasting and that is not recommended. So, if you want to make this recipe you’ll need a dehydrator or you can just soak the nuts and not dry them. You can experiment with adding apple cider vinegar and see how you do.
Hi Linda, I avoid anything fermented including soaked nuts/seed so I toast them gently to rid the phytic acid. I also avoid high protein foods unless they also have high amounts of magnesium like some fish. High protein/calcium foods like meat and dairy will deplete our magnesium and we can’t absorb any nutrients when our magnesium is too low. Most people are low. So instead of trying to increase protein we should all be increasing our nonsynthetic magnesium. Read about it online – magnesium deficiency seems to be tied, or associated, with most ailments.
