Prep time: 10 minutes Makes about 1 cup
1 bunch fresh cilantro, washed and dried, ends clipped
2 tablespoons fresh oregano
1 lime, juiced
3/4 cup extra virgin olive oil
1/3 cup pine nuts (optional)
2 cloves garlic, minced
sea salt to taste
Blend all ingredients together. Use as a thicker salad dressing, a dip for vegetables, or as a topping for chicken or fish after it has been cooked.

I am one of those people who do not love cilantro. I find if i make the cleansing pesto and then add a cupmof cooked beans that mellows it and makes a great salad dressing. I just put a heaping tbs on topmof my salad and it tastes so much better.

Pine nuts are allowed on a candida diet and for this recipe you can also use almonds, Brazil nuts, cashews, macadamias, pecans or walnuts.

Hi Linda, You can use lemons instead of limes. Outside of the body lemon and lime juice are acidic, but once they are metabolized by the body they have an alkalizing effect.

Thank you for your prompt reply! I should have indicted that acidic foods generally, including lemons, limes, tomatoes, vinegar – including apple cider vinegar, etc. cause irritation and a skin reaction. Might you have another idea?

Hi Linda, For this particular recipe you could try a bit of fresh squeezed orange juice or a few drops of lemon extract. If either of those aren’t an option, just omit the lemon juice from the recipe and add water to thin out the consistency.

Thank you SO much for this recipe, Christa. I had volunteer cilantro o’plenty come up in my greenhouse this spring and an extra bounty of oregano greening up outside. What to do? I happened upon this recipe. Just made some. It’s out of this world!!! Begs to be spread on a warm corn tortilla, or a taco, or beans or …! Plus, I’ve long been acquainted with the chelating effects of cilantro (for getting rid of heavy metals in the body) and the anti-biotic/anti-viral/anti-fungal effects of oregano). So not only is this off-the-charts delicious, it’s amazing medicine!
I always make fresh basil pesto. This is a wonderful addition. It’s almost addicting it’s so good! My husband really liked it on the grilled shrimp.
Hi Christa, Are we supposed to pulverize this in a food processor like regular pesto? Also I’m doing the gut thrive & you spoke about soaking nuts, seeds & grains so does this mean to soak the pine nuts as well?

Hi Christa, I have cilantro coming up all over the yard and made a batch of this pesto. It is wonderful!!!! My husband used it this morning for breakfast on his vegetable medley topped with cheddar cheese and poached eggs and just kept rolling his eyes and saying “this is the bomb”. He now wants to cook for the men’s prayer breakfast and introduce his new favorite breakfast. Thanks for the recipe! The Brown’s are loving it!
Curious about snipping the ends of the cilantro. I typically just chop the cilantro with some of the stem. Are you all trying to remove all the leaves with no stem at all?
I do not like the “smell” of fresh cilantro but the pesto does not overwhelm and tastes delicious!
