Red Lentil Indian Dahl

Ingredients:

-Two cups of dried red lentils
-Half of yellow onion, chopped
-Four cloves of garlic, crushed
-Two tsp. of crushed ginger
-One small sweet potato,  diced into 1"""" strips
-Two tsp. tumeric
-Two tsp. cinnamon
-Two tsp. cumin power
-half of lemon, juiced
-Eight cups of water 
-One to two tbs. of coconut oil or grapeseed oil
-One to two tsp. of sea salt


Directions:

Heat pan and add oil.

Saute onions on med heat until lightly cooked or golden,  add garlic and ginger. 

Saute for one to two mins, until you can smell garlic and ginger. 

Make space in middle of pan, add a little oil and remaining spices.  Add crushed chili flakes if you like spicier food. Mix spices with onion, garlic and ginger until they are all covered in spices.  

Add lentils, sweet potato, water and two pinches of sea salt. Bring to boil cover with lid and turn down to low heat simmer. 

Cook for about twenty minutes. Check occasionally to see if you need to add a little water.
