Mexican Style Pinto Beans

"

Soak beans 2-4 hours, prep time 5 minutes, cook time 1 hour, serves 4

1 c dried pinto beans
4 c water
3 cloves of garlic, minced
1 jalapeno pepper, minced
½ teaspoon cumin
½ teaspoon c hili powder
juice of one lime
salt to taste.

Directions: Boil beans 3 minutes in water. Remove from heat and let sit 2-4 hours. Drain and rinse beans. Add to a large pot with 4 c fresh water and bring to boil. Add garlic, jalapeno and cook for 1 hour until beans are soft. Add cumin, chili, lime and salt to taste.
