Late Summer Corn Salad

"

Prep time: 20 minutes, Cook time: 10 minutes, Serves 6

4 ears corn
½ small red onion
½ green bell pepper
½ red bell pepper
½ bunch cilantro
1 T olive oil
juice of 1 lemon
sea salt and pepper to taste

Directions: Boil corn 5-10 minutes. Cut kernals from cobs and place in mixing bowl. Finely dice onion, peppers and mince cilantro. Toss all ingredients in mixing bowl and enjoy.
