Cool Cucumber and Avocado Soup

Prep time: Soak cashews over night, Prep time:10 minutes, Cook time: none, Serves 4

1 cucumber, peeled
1 avocado
2 green onions
juice of 1 lime
1 c cashew cream
1 c water
salt and pepper to taste

Directions: Cashew cream: Soak 1 c cashews in cold water. Cover and put in refrigerator over night.  Drain cashews and rinse. Place in blender and cover them with with water. Blend on high for several minutes. Roughly chop cucumber, avocado and green onions and toss in blender. Add other ingredients and blend until smooth.
