Chai Chicken

Prep time 10 minutes, Cook time: 45 minutes, Serves 4
4 organic chicken legs
4-5 sliced carrots
1 cup coconut milk
2 cups chai tea
Directions: Preheat oven 350 degrees. Place chicken and carrots in casserole dish and sprinkle with a pinch of salt and pepper. In a pot combine coconut milk and tea and bring to a boil. Pour over the chicken in the casserole dish. Cover with a lid and bake in the oven at 350 degrees for 45 minutes or until chicken is cooked through. Serve with brown rice and greens.
